Preparation
- Combine the milk, vanilla and lemon zest in a saucepan.
- In another pan, put the egg yolks, the sugar and mix with a whisk
- Add the starch and dissolve it with a little cold milk
- Add the milk slowly and mix with a whisk until the cream thickens.
- When it starts to boil, pour the cream into a glass bowl and cover with cling film.
- Whip the fresh cream and delicately mix the two creams together.
