| 2 | pre-cooked beets |

Preparation
- Take the pre-cooked beetroots and cut them into cubes, roughly.
- Place them in a bowl and season with oil, salt, pepper and lemon juice.
- Mix all the ingredients in the bowl well and let it rest for 10 minutes so that they absorb the flavor.
- Shape the beetroot tartare using a colander and serve on small plates.
- Garnish with a teaspoon of Strakì Sterilgarda and add a drizzle of oil, pepper, salt and vinegar.
