Beetroot tartare with Strakì

Ingredients
2 pre-cooked beets
q.b. olive oil
q.b. salt and pepper
q.b. vinegar
1 lemon
125 g strakì Sterilgarda
Preparation
  1. Take the pre-cooked beetroots and cut them into cubes, roughly.
  2. Place them in a bowl and season with oil, salt, pepper and lemon juice.
  3. Mix all the ingredients in the bowl well and let it rest for 10 minutes so that they absorb the flavor.
  4. Shape the beetroot tartare using a colander and serve on small plates.
  5. Garnish with a teaspoon of Strakì Sterilgarda and add a drizzle of oil, pepper, salt and vinegar.
