Potato pancakes with salmon

Ingredients
3 potatoes
4 cucchiaini Flour
1 onion
400 mL Long-life Whole Milk UHT Microfiltered Sterilgarda
2 egg
1 cucchiaino yeast
150 g smoked salmon
150 g strakì Sterilgarda
q.b. chives
q.b. salt
q.b. pepper
Preparation
  1. Peel the potatoes and grate them into a bowl. Add the onion, baking powder, and flour, then mix everything together.
  2. Separate the yolks from the egg whites and beat the latter until stiff.
  3. Add the Sterilgarda Whole Milk to the egg yolks and add salt and pepper.
  4. Also add the whipped egg whites and mix the resulting mixture with the potatoes.
  5. Using a non-stick pan of a suitable shape for pancakes, drop a little batter and distribute it using a spoon.
  6. Let the pancake cook for a few minutes until it becomes golden and firm enough to be flipped.
  7. Gradually arrange the pancakes on a plate and once all the batter is used up, serve the pancakes with the smoked salmon, chives and Strakì Sterilgarda cheese.
