Grouper on basil sauce and orange juice

Ingredients
1 Kg grouper
250 mL 100% Orange juice Sterilgarda
50 g sugar
60 g butter
100 mL extra virgin olive oil
50 fresh basil leaves
30 g grated parmesan cheese
q.b coarse salt
Preparation
  1. To prepare the basil sauce: wash the fresh basil leaves and dry them.
  2. Pour the basil into the blender and blend together with the Parmesan, salt, and a drizzle of oil.
  3. Dilute the mixture with the remaining oil until you obtain a basil sauce of the desired consistency.
  4. To prepare the orange juice: pour the Sterilgarda 100% Orange Juice into a saucepan, add 50g of sugar and place the saucepan on the heat.
  5. Bring to a boil and then lower the heat.
  6. Remove the saucepan from the heat and add the soft butter, then whisk until the mixture becomes smooth.
  7. Now clean, debone, and scale the fish, obtaining 4 fillets. Place them in a pan with a drizzle of extra virgin olive oil.
  8. Cook them on both sides and, once cooked, place them on a plate and drown them in the basil sauce and orange juice.
  9. Serve.
