CARASAU BREAD BASKET WITH STRAKÌ

INGREDIENTS

  • n.8 Carasau bread disks
  • 200gr of Strakì Sterilgarda
  • extra virgin olive oil to taste
  • pepper to taste
  • smoked salt to taste
  • fresh basil leaves to taste

PREPARATION

  • Turn on the oven at 180°.
  • Create a kind of cream mixing the Strakì with the olive oil, smoked salt and black pepper. ( then add some basil leaves to a part of cream ).
  • Dunk under water the Carasau bread disks until they bacome tender.
  • Encase 4 mono mould with the Carasau disks.
  • Alternate the cheese cream with thin Carasau layers. ( about 4 layers ).
  • Brush the basket surface with olive oil and salt with some smoked salt.
  • Bake for max 12′ keeping attention at the basket color.
  • Take out of the oven, wait about 10 minutes and put out of shape the cheese baskets.
  • Serve almost lukewarm accompained with a mix salad.

Strakì Sterilgarda is a cheese similar to the typical soft cheese Italian Lombard. A soft cheese and short seasoning made from whole cow’s milk. It looks like a fatty and creamy cheese with a white color. Originally produced in Lombardy, the etymology of the name is related to the use of milk from “tired” cows (from Lombard stracch) for the transhumance to the valley floor after the summer pasture.
