Ingredients
| 250 g | strakì Sterilgarda |
| 8 | egg |
| 450 g | zuchinis |
| 50 g | grated cheese |
| 200 g | smoked salmon |
| q.b. | salt |
| q.b. | extra virgin olive oil |
Preparation
- In a large bowl, beat the eggs with a pinch of salt using a fork.
- Wash the zucchini and pat them dry with a kitchen towel. Add them to the eggs, grating them with a large-holed grater.
- Once well combined, add the grated cheese and mix.
- Line a rectangular baking pan with baking paper, grease it with a drizzle of oil and pour the egg mixture into it.
- Cook the omelette in a preheated static oven at 180° for about 20 minutes.
- Once ready, take it out of the oven and let it cool completely.
- Cover the omelette with cling film and turn it over onto a flat surface.
- Fill the omelette with the Strakì Sterilgarda and the salmon slices, leaving a few centimetres free around the edges.
- Roll up the omelette tightly and wrap it in cling film.
- Let it rest in the fridge for at least 4 hours.
- Once the necessary time has passed, carefully remove the cling film and cut it into slices.
- Serve.
Warm the Sterilgarda milk without bringing it to the boil, add the sugar and let it dissolve. Pour the milk over the yeast and leave to rest for 10 minutes ...
