Salmon and courgette roulade

Ingredients
250 g strakì Sterilgarda
8 egg
450 g zuchinis
50 g grated cheese
200 g smoked salmon
q.b. salt
q.b. extra virgin olive oil
Preparation
  1. In a large bowl, beat the eggs with a pinch of salt using a fork.
  2. Wash the zucchini and pat them dry with a kitchen towel. Add them to the eggs, grating them with a large-holed grater.
  3. Once well combined, add the grated cheese and mix.
  4. Line a rectangular baking pan with baking paper, grease it with a drizzle of oil and pour the egg mixture into it.
  5. Cook the omelette in a preheated static oven at 180° for about 20 minutes.
  6. Once ready, take it out of the oven and let it cool completely.
  7. Cover the omelette with cling film and turn it over onto a flat surface.
  8. Fill the omelette with the Strakì Sterilgarda and the salmon slices, leaving a few centimetres free around the edges.
  9. Roll up the omelette tightly and wrap it in cling film.
  10. Let it rest in the fridge for at least 4 hours.
  11. Once the necessary time has passed, carefully remove the cling film and cut it into slices.
  12. Serve.
