Ingredients
750 mL Sterilgarda microfiltered whole milk
250 mL whipping cream Sterilgarda
280 g sugar
2 g bicarbonato
to taste salt
1 pods vanilla

Preparation
  1. Cut the vanilla pod and remove the pulp and seeds with a knife.
  2. Pour all the ingredients, including the Sterilgarda microfiltered whole milk and the Sterilgarda whipping cream into a heavy-bottomed pan, mix and place on a low flame.
  3. After half an hour the mixture will begin to take on an amber hue, adjust the flame to minimum and stir often.
  4. (during cooking it is recommended to use a whisk to contain any cooking foam)
  5. After about an hour of cooking the cream will be ready.
  6. Pour the boiling cream into two sterilized jars.
  7. Store in the fridge for about a week.

250 mL panna da montare Sterilgarda
280 g zucchero
2 g bicarbonato
pizzico di sale
1 baccelli vaniglia

Preparation
  1. Incidere il baccello di vaniglia ed estrarre con un coltellino polpa e semi.
  2. Versare tutti gli ingredienti, compresi il Latte intero microfiltrato Sterilgarda e la Panna da montare Sterilgarda in una pentola dal fondo spesso, mescolare e porre sul fuoco a fiamma bassa.
  3. Dopo mezz'ora la miscela inizierà ad assumere una tonalità ambrata, regolare al minimo la fiamma e mescolare spesso.
  4. (durante la cottura si consiglia di utilizzare una frusta per contenere l’eventuale schiuma di cottura)
  5. Dopo circa un'ora di cottura la crema sarà pronta.
  6. Versare la crema bollente in due vasetti sterilizzati.
  7. Conservare in frigo per circa una settimana.
