500 g 00 flour
100 mL Sterilgarda microfiltered whole milk
110 mL sparkling water
40 g lard
7 g brewer's yeast
0.5 teaspoon sugar
2 teaspoon salt
q.b. seed oil
Prepare this recipe with:
Preparation
  1. Combine the yeast and flour in a mixer; mix and add the sugar and lard.
  2. Mix at low speed, gradually adding first the water and then the Sterilgarda UHT microfiltered milk.
  3. Add the salt and continue kneading until you obtain a smooth, firm dough.
  4. Transfer everything into a bowl, cover with cling film and leave to rest for at least two hours or until the dough has doubled in size.
  5. After two hours, roll out the dough to a thickness of 3-4 mm.
  6. Using a serrated wheel, cut out diamonds measuring approximately 6 cm per side.
  7. Fry the crescentine on both sides in a pan with plenty of seed oil.
  8. Drain them with a slotted spoon, dry off the excess oil and serve hot.

500 g farina 00
100 mL latte intero microfiltrato Sterilgarda
110 mL acqua frizzante
40 g strutto
7 g lievito di birra
0.5 cucchiaini zucchero
2 cucchiaini sale
q.b. olio di semi
Prepare this recipe with:
Preparation
  1. Unire il lievito e la farina in una planetaria; mescolare e aggiungere lo zucchero e lo strutto.
  2. Impastare a bassa velocità aggiungendo a filo prima l’acqua e poi il latte microfiltrato UHT Sterilgarda.
  3. Unire il sale e continuare ad impastare fino ad ottenere un impasto liscio e sodo.
  4. Traferire il tutto in una ciotola, coprire con la pellicola da cucina e lasciar riposare per almeno due ore o fino a quando l’impasto non sarà raddoppiato.
  5. Trascorse le due ore, stendere l’impasto ad uno spessore di 3-4 mm.
  6. Con una rotella dentellata ricavare dei rombi di circa 6 cm per lato.
  7. Friggere le crescentine su entrambi i lati in una padella con abbondante olio di semi.
  8. Scolarle con una schiumarola, asciugare l’olio in eccesso e servire calde.
