Ingredients
100 mL Sterilgarda microfiltered lactose-free whole milk
180 g dark chocolate
2 g gelatin sheets
190 mL whipping cream Sterilgarda
7 g glucose

  1. Soak the gelatin in cold water. Finely chop the chocolate and transfer it to a bowl.
  2. Melt the chocolate in the microwave, turning it on a few seconds at a time and stirring often so as not to burn it.
  3. Pour the Sterilgarda Whole Milk, the Sterilgarda Whipping Cream and the glucose into a saucepan and bring to the boil.
  4. At this point pour about half of it into the chocolate and mix with the spatula.
  5. Drain the gelatine and add it to the saucepan.
  6. Mix with a whisk to melt it completely and pour it into the chocolate mixture. Mix again with a spatula.
  7. Work the cream with an immersion blender, without incorporating air, keeping the blender always immersed, until it is smooth, fluid and shiny.
  8. Transfer to a bowl. Cover with cling film and leave to crystallize in the refrigerator for 12 hours.
  9. Remove the Namelaka from the refrigerator. It will be compact and creamy, perfect to use as a dessert filling. Otherwise, work it with an electric whisk for a few minutes, this way it will be airy to decorate many desserts.

100 mL Latte Intero Microfiltrato UHT Sterilgarda
180 g cioccolato fondente
2 g gelatina in fogli
190 mL panna da montare Sterilgarda
7 g glucosio

Preparation
  1. Mettere la gelatina a mollo in acqua fredda. Tritare finemente il cioccolato e trasferirlo in una ciotola.
  2. Fondere il cioccolato in microonde, azionandolo pochi secondi alla volta e mescolando spesso in modo da non bruciarlo.
  3. Versare in un pentolino il Latte Intero Sterilgarda, la Panna Da Montare Sterilgarda, il glucosio e portare a sfiorare il bollore.
  4. A questo punto versare circa la metà all'interno del cioccolato e mescolare con la spatola.
  5. Scolare la gelatina e aggiungerla nel pentolino.
  6. Mescolare con una frusta per farla sciogliere completamente e versarla nel composto al cioccolato. Mescolare ancora con una spatola.
  7. Lavorare la crema con un mixer ad immersione, senza incorporare aria tenendo il mixer sempre immerso, fino a che non risulterà liscia, fluida e lucida.
  8. Trasferire in una ciotola. Coprire con pellicola e lasciare cristallizzare in frigorifero per 12 ore.
  9. Estrarre la Namelaka dal frigorifero. Risulterà compatta e cremosa, perfetta da utilizzare per farcire un dolce. Altrimenti lavorarla con le fruste elettriche per pochi minuti, in questo modo risulterà ariosa per decorare tantissimi dessert.
